The "Usual Gang of Idiots" at MAD magazine did their fair share of spoofing monsters over the years. Here's a sample of those that made it on the cover and a few paperbacks.
The Frankenstein cover on #89 and the King Kong spoof on #94 are my favorites. Just watched the 1976 King Kong again yesterday, so that parody featuring the stunning Jessic Lange on #192 is most appreciated.
Agree with you on the covers -- they are classics. My father-in-law worked on the '76 King Kong. He worked for many years for various studios. I never got to visit the set and meet Miss Lange, though. Darn!
